All the Salmon comes from the West Coast of Scotland, the Outer Hebrides and the Shetlands and is produced by probably the only genuinely traditional smokery in production today. Brick kilns are used resulting in a wonderfulmild smokey flavour seldom found today and distinct from the mass production kilns.
